I am usually not a big fan of salad dressings, but for this particular dressing I gladly make an exception. Creamy, sweet and zesty. Flavorful, summer-y, healthy and very versatile. The only downfall? It’s quite addictive!
Salad
* Arugula (rocket)
* Avocado
* Mango
* Cucumber
* Mango Coconut Dressing
Mango Coconut Dressing
* 6 tablespoons coconut oil, liquid
* 1 very ripe mango
* juice of one lemon
* fresh grated ginger, to taste
* 2-4 Tbsp raw honey or a few fresh, pitted dates
Blend all dressing ingredients together and store in a glass jar in the fridge.
Make sure to pick a very ripe mango. The riper and stringier the mango, the thicker your sauce. If you want a thin dressing a normal ripe mango is good. If you want a thicker dressing, to use as a dip or even pie filling, use an overripe, stringy mango, and use dates instead of honey. Consider using less oil as well. I bet the dip would go great with celery stalks, yum!
