Hiya guys! Sorry I have been a little MIA this week. I am going through some stuff + am busy navigating my way around a new study so there ya have it!
The day before yesterday I shared a photo on facebook and some of you were interested in the raw cauliflower curry recipe so here it is. I paired the raw curry with organic naan and steamed acorn squash <3. I love mixing raw ‘n cooked foods for balance and ease!
Raw Cauliflower Curry
Serves 4
* 1/2 a large head of cauliflower
* 1 large carrot
* 2 handfuls cashews
* 3-6 T curry powder (kerrie), according to taste
* 1-2 T raw honey
* dash of salt
* optional: chili or paprika powder
Chop cauliflower in pieces and process in blender or food processor until very fine. Transfer to a large bowl. Process the carrot in the same way and add to the cauliflower. Process cashews coarsely. Now mix the whole lot together and stir well. Done!
Replace the heavier rice in your Indian dishes for this raw version to make for a lighter meal (with more veggies, yay!).
