Hiya guys!
Whoops, sorry for my little stint of absence! It’s been a crazy hectic few days for me, but all good & fun! As you may recall from my last post my ex boyfriend was coming over from Denmark for the weekend (for you long time readers also known as The Boy or Militairy Man
) and we had tons of fun. We had always had a lot in common but apparently, even more so today. Did I ever mention on the blog the boy went vegan not too long after moving back to Denmark? And that he became as addicted to juice as I am? Mind you, his reaction to me going vegetarian was, and I quote, “but I need my meat!” haha.
Here are some pictures of my weekend and the last few days…

I am all about the simple salads these days, and rocket (rucola) as the base!
Other than walking around all of Amsterdam, I also took the boy to his very first Bikram class! Needless to say he is now hooked and has been taking a class every day since he came back to Denmark. Whoohoo, another convert!

Last night’s dinner for me & Marieke
Mediterranean ‘CousCous’ Salad
Serves two
* 2 handfuls mixed chard/rocket
* app. 1.5 cups cooked Quinoa
* 4 T raisins
* oven roasted veggies (I used zucchini, bell pepper, eggplant and carrot)
Cover the veggies in (coconut) oil and some salt and roast for about 20-35 minutes in the oven. Layer the rocket on two plates and cover with Quinoa and raisins. Top with the roasted veggies. Simple and very yummy!

Where are all the sexy vegan men in my life?? Apparently they don’t exist because I’ve yet to meet one. If I don’t find one in the next few years I’m moving over to that side of the ocean.
PS. I watched that movie “Fat, Sick and Nearly Dead” because of you and now both me and my sister want to try I short juice fast (amaaaaaaazing movie). I’ve also started using my juicer again and I’m drinking a juice as I type this.
