Morning guys!
I feel like crap. I started getting a super bad headache last night that wouldn’t really pass. Headache is almost gone this morning but I’m pretty congested and feeling a little blah overall. Did I mention I burned my stomach quite badly the day before yesterday?
Yeah, not too smart. Huge pot of boiling water filled with tempeh (mmm) and I decided to stir vigorously. It hurts and looks awful. Oh well, I don’t think it’ll scar at least.
What the hell do vegans eat anyway?!
For today, I though it’d be fun to capture a day of my eats once again. Been a long time since I did one of those! I started my blog out as mainly food journalling, on a day-to-day basis, but I already soon discovered I love writing articles so much more. I also still really like dumping a boatload of photos of my eats into one post, as opposed to: here’s what I ate today. But alas, from time to time it can be interesting to see what one eats, right? So here goes, this was my day of eats yesterday.
Juice
Yesterday I made my fav juice thus far.

Mellow & Mild Juice
* 1 pear
* 1 piece cuke
* few handfuls spinach (or Romaine)
* 1/3 lemon
* knob ginger
Breakfast
Best Oat Bran, what else? I made a new batch of toasted, salted pecan butter. This stuff should be illegal. It’s the easiest nut butter to make too.
I went to spin class in the morning and broke up quite a schweat! On my way home I ate the other half of the banana I used for breakfast.
Spin clothes. I love tight shiny run/spin pants, I think they’re sexy. I am not even being sarcastic.
Lunch
Lunch was out-of-this-world-good and I will remake this quite some times.
Tempeh Sandwich
* 2 slices whole wheat bread
* 1 tempeh steak (see below)
* vegan mayonaise
* 2 leafs Romaine lettuce
* pepper & salt
Tempeh Steaks
Yields 4 steaks (2 servings)
* 200 g tempeh
* 3/4 cup (180 ml) vegetable broth
* 2 T soy sauce
* 2 T apple cider vinegar (or regular vinegar)
* 2 T agave
* 2 T oil of choice
* 3 T smoke extract (powder) or sub smoked paprika
* 2 cloves garlic, minced
For tempeh steaks: Cut a 200 g block of tempeh in half length-wise, and then diagonally. Cook 200 g tempeh in boiling water for 10 minutes, to take the edge of the taste and to make it ready for marinating. While cooking, prepare marinade. Place tempeh in bowl with the marinade and let marinate for ~one hour. Note: the longer is NOT the better here.
After one hour, oven bake, pan bake or grill. I pan baked these. Heat a skillet over high heat, heat a tiny amount of oil in pan, and bake them until brown. Add a little of the marinade and cook along.

I am in lurve with this stuff. I always believed in this stigma around mayonaise, ‘fattening’, ‘unhealty’, until one of my teachers last week opened my eyes: real mayonaise is made primarily of sunflowerseed oil, which is very healthy. So yes, high in fat, but I never shy away from healthy, yummy fats!
With lunch I also munched a raw chocolate/cherry nibble! Recipe soon
Snack
After munching on some nuts & raisins I decided it was time to make an actual snack. Smoothie with: 1 cup soy milk, half a banana, frozen cherries, raspberries & grapes, 2 T cacao powder, 1 T pecan butter, agave. Tasted nice & refreshing but maybe a little too cacao-y, plus I couldn’t detect the pecan butter at all

And, apparently, had a photoshoot with myself. Chocolate does crazy/good things to you.
Dinner
I scored some fresh Roseval (red skin) potatoes on the market and put them to good use for dinner. Love this: a typical Dutch ‘meat’, potatoes & veg meal haha. Well, almost. Steamed potatoes (in the microwave for 10 minutes on high), 2 tempeh steaks, tossed salad & mayo. Simple but it was really super delicious. And yes, I am on a tempeh kick. I cooked up 8 servings Tuesday to safe some time during the week, which is working out great for me

Salad: spinach, avocado, green & black olives, cerry tomatoes, cuke, pepper, salt.
More Snacks
I invited my mom over for a cup of coff- er- juice
. We shared a juice, the same one as I had in the morning only with Romaine now as to not overdo it on the spinach.
A muffin had to happen of course. Chocolate muffin dipped in to melted chocolate, what else? Recipe soon!
That’s it! A full day of my eats. Is this a pretty standard day for me? Yes and no. Yes as in I do eat chocolate every day and yes as in I do make all my meals myself most days, and prepare a special lunch. No as in I have a lot of days where I don’t prepare a proper (afternoon) snack for myself and just keep munching my way through the day, which is something I continuously try and work at to avoid. I don’t mind munching per se, but I think it’s better (also for the teeth and stomach) to just have a proper snack moment. Probably also more nutritious because what I snack on = nuts, nut butter, dried fruit, chocolate.
I had a Yoga class schedules this morning but decided to skip to get some rest. Hopefully I receivce my Crazy Sexy Diet book today, wheee! I think I’ll do some Yoga by myself (scary) and I have another class scheduled tomorrow. Ok time for my oat bran now!

thank you! well, I don’t not wear make-up purposely, but yeah lately I hardly wear make-up. I would be hard-pressed to go to class without some mascara though

yeah it looks even worse now! I have been putting aloe vera & bio oil on it but I’ll alternate with vit E :p. luckily I had all three already!

That shop is really a recommondation. It sells a lot of different teas, and sells many spices.
And it has different kitchen-equipment.
And I’ve seen a Buddha on your photos, and that as well gives me the idea that you will like that shop.
And haha, no I haven’t used the smoke powder yet.
At this moment I am trying to stop making and buying new stuff, until I am done with the old things.
And when that times come, I will make the smokey-black-bean-spread right away.
And Aloe Vera is very good as well. I have a bottle of that from Croatia and I love it

Wow, how is it possible to make all those healthy and delicious foods during the day!? I love it, but I think I can only manage it on my not-working-days. This said, it’s clear I’m a creature of habit, especially on working-days. My schedule:
- breakfast: oats
- snack: 1 piece of fruit (apple/pear/kiwi/sometimes grapes/banana) and a piece of bread with butter and something (I think is) healty
- lunch: 1 piece of fruit (see snack) and 2 pieces of bread with ( see snack) and a glass of karnemelk (I saw a translation: buttermilk?!)
- snack: a piece of bread with (see snack) and a couple of cherry tomato’s and a piece of cucumber
- diner: the all dutch steamed potato’s, veggies and meat
Since some time now I’m trying to be more creative in making meals. In the weekends I’m making some progress, but those working days….
Your blog helps me to be more creative, (well, to try other things, it’s your creativity
) and makes me question if the way I eat is as healty as I think or hope it is. So thank’s for that.
It may SEEM daunting, but it’s less work than it seems! First off, it’s a good idea to ease yourself into making some more stuff yourself from time to time. then, make things that will last you for some days, a week, or even longer. or cook/make big batches, like I did with my tempeh. seriously, my lunch took maybe 3 mins to throw together. dinner took maybe 15 minutes tops. I didn’t even cut the potatoes, just steamed them and in the meantime I arranged the salads. breakfast: oat bran cooks up in 5 minutes or so. the pecan butter I already have at hand of course. voila! a smoothie doesn’t take that long either. the muffins I baked, yes, but now I have a freezer full for fast snacking the coming week (or days
). same for the chocolate nibbles!

I think i’m half habit, half random. Usually with breakfast and my snacks I have certain rotations I go through, but lunch and dinner change pretty often. Your tempeh looks so good! That’s smart making a huge batch all at once.
I’m 50/50 too. Like, I find something I realllyyy like (hello oat bran, tempeh) and stick with it for a while, and then move on haha. but throughout the day I like variety. no bread twice a day or the same fruits, things like that

hahaha that sounds so badass! Yeah I’ve got plenty of scars etc as well. as long as they’re not across my face I dont mind that much (although this one on my stomach I hope wont scar!
My days are so rarely typical. Today I had snickerdoodle cookies, in bed, for breakfast. My boyfriend’s mom sent them and…I could not say no. For lunch I had a raw kale and red cabbage and dulse salad, roasted cauliflower, and a jar of home made kombucha tea. No idea what I will have to dinner but I am pretty sure it will be vegetables in some form. Probably some shaved fennel salad in there somewhere? Maybe a quinoa burger, some sauteed mushrooms? And kale. Of course. I eat kale every day.
I wish I had the urge to eat kale everyday haha! still afraid of it…

Ik ben al tijden een stille meelezer en nouja, ik ben een soort van fan haha. Wat ik vooral leuk vind aan je website is dat je heel ‘echt’ bent. Je foto’s zijn gewoon normaal genomen en wat je kookt/maakt ziet er ook uit alsof je het op mag eten. Ennn, dat heeft als resultaat dat mensen zoals ik (die wel houden van mooi eten en mooie foto’s, maar zelf niet tot zulke resultaten kunnen komen haha) jouw recepten meer aandurven.
Goed, wat ik eigenlijk wilde zeggen is dat ik gisteren je tempeh-steaks gemaakt heb en dat ik je tempeh-periode heel goed begrijp haha. Het was echt heel lekker en ik heb echt zin om nog veel meer tempeh te gaan maken!
En ook nog een vraagje. Die sushi-wrap die je weleens post, waar koop je die? Ik woon ook in Amsterdam namelijk en hij lijkt me echt superlekker!
