When I was browsing for a new fun treat-like recipe last week, I came accros what seemed to be somewhat of a phenomonon: oat truffles! Sadly almost all recipes were heavily butter and sugar loaded (like this one or this one), while I was looking for a decadent, yet semi-healthy treat, one that you can eat everyday . I thought to myself: why not keep it very simple, and just stick to the name? The result is a truffle snack that is very easy to make and quite healthy to boot.
Makes 20-25 truffles
* 180 g cashews
* 125 g dark chocolate
* 90 g oats
* 2 T Sucanat (natural sugar)
* 3/4 t vanilla
* dash of salt
Throw oats and cashews in food processor and grind to a fine flour. (Or start with grinding oat to flour and add cashews later for a chunkier truffle!). Transfer mixture to a bowl and add sugar, vanilla and salt, and as much water as needed to form a thick, sticky though (my guesstimate is I used around 6-7 T). Kneed dough with your hands and form firm balls. Place balls on a parchment lined baking tray and place in freezer for at least an hour (if making for a party, this step can also be done in advance !).
After one hour, melt chocolate in microwave on medium for about 2.5 minutes, while stirring a few times (or use the stovetop). Dip the balls in the melted chocolate and fully cover each ball, and place back on baking tray. Freeze for another hour after covering each ball in chocolate. Enjoy!
The truffles are made of primarily cashews and oats, both clean, healthy and wholesome ingredients. Chocolate is a little sugar-heavy but at least it’s dark chocolate and filled with anti-oxidants!These truffles are plenty sweet from the cashews and the addition of vanilla and a tiny bit sugar (2 T per 25 truffles? I’ll take it!), but the taste is grounded by the oats and dark chocolate. I think the addition of coconut, in the form of coconut oil or shredded coconut, would be fabulous, but I wanted to leave these coco-less because the boy’s not a fan of coconut (?!). I think subbing 3 T water for 2 T coconut oil would make these even better and healthier. Your call!
