It’s been a while since I did a regular ‘ here’s-what-I-ate-today’ post, the main type of posts I did upon starting this blog. Although I busy myself more with writing out new recipes and writing short articles and other things lately, I still shoot pictures of my meals. So, here’s what I’ve been eating lately
:

Pumpkin oatmeal with toasted pecans (I have a HUGE crush on toasted pecans atm, I try and incorporate them in/with anything and everything
). I still have a hard time getting used to regular oats, having been fed Brinta (instant wheat meal) all my life. I’ll keep on trying since oats are such a superfood and I like them in every other way, but if come winter I still don’t especially like the consistency, it’s back to Brinta for me
.

Roasted paprika stuffed with leftover braised cabbage & basmati, topped with raw walnuts. I try to eat around 3-4 walnuts everyday for omega-3 boost.

‘ Cheezy’ broccoli (with soysauce & nutr yeast) & roasted almonds on a bed of (hidden) quinoa

Scrambled eggs. Oh no wait, scrambled tofu with black olives, tomato and onion.

In my Martha Steward lunchbox: multigrain rice, baked sesame tofu, avocado, walnuts, salt & pepper. This. Was. Scrumptious.

So scrumptious indeed, that I did a spinoff the next day: multigrain rice, avocado, hemp seeds and baked TEMPEH. Oh boy oh boy, that stuff is awesome. First time I made it at home. Topped with a little fried onion:
Onto my newest obsession:

Vegan mac ‘n cheese! This badboy is absolutely indescribably good, and tastes even better the next day, cold, straight form the frigde. In my opinion, those make for the best dishes

Paired with a good amount of fall salad, it makes for a winning combo.

I was a bit hangrier the next day. By the way: buy apple cider vinegar. It’ll change your life.
