I’m so happy! I decided to give almond butter another shot, since I made it once, months ago, and wasn’t crazy about it. I used raw almonds and nothing but almonds, and for me that taste was a little too bitter. This time I roasted them and enhanced the flavor further by adding a drop of almond extract and a dash of (Lo)salt. Ah-ma-zing! Then and there I decided it needed ground flax seeds, for a fiber and omega-3 boost on my morning slice o’bread

Ingredients:
* Bunch of (raw, unsalted) almonds (start with 300-400g)
* 1/4 t – 1/2 t almond extract
* dash of (Lo)Salt
* Ground flaxseeds (about 2 T)
Requires: food processor
Heat your oven to 180C (350F) and roast the nuts for 12 minutes, let cool for a few minutes. Place nuts in food processor and process until the mix becomes smooth (for me it always takes a while with almonds). You may have to scrape the sides of the bowl from time to time. Add in extract and salt and keep processing (and scraping) until the butter has the consistency you like. Then, add the flax seeds and give it another good whirl, so everything is well mixed. Enjoy!
