This is a truly genious recipe and well renown in the blog-world. The infamous recipe is invented by lovely Gina, also know as The Fitnessista. It took me a while to give them a try, but once I did I couldn’t help but wanting one every morning for breakfast (which I did). To date, I have come up with numerous variaties of my own, which I will share here, plus the basic recipe as per Gina. This is an amazing breakfast: its easy, its delicious and its nutritious, and for that reason infamous in blog-land! Of course, who wouldn’t like to eat a HUGE COOKIE for breakfast? It also makes for a good portable/on-the-go breakfast (just make sure you don’t carry it around for too long, since it’s a raw recipe). They pack a protein punch at around 16g protein, have complex carbs and fiber from the oatmeal, and a small amount of healthy yummy fats from the nut butter =)!
A while ago I was looking for a portable snack with a decent amount of protein and simply devided the breakfast cookie dough in half, forming two smaller cookies which make perfect healthy snacks.
