The first time I made pumpkin butter, I thought it was too much of a hassle. So when I needed pumpkin butter for another recipe I had in mind, I opted to simplify the recipe, resulting in a very simple and straight-forward outcome. The butter takes you only 15 minutes to make, but will last you a long, long time. Unless of course, you decide to use the whole batch for a pie or muffins .
Throw all ingredients in a medium sized pot and cook for 15 minutes, stirring the entire time. The mix will thicken up and become smooth and a bit viscous.
