The first time I made pumpkin butter, I thought it was too much of a hassle. So when I needed pumpkin butter for another recipe I had in mind, I opted to simplify the recipe, resulting in a very simple and straight-forward outcome. The butter takes you only 15 minutes to make, but will last you a long, long time. Unless of course, you decide to use the whole batch for a pie or muffins

Ingredients
* 500 g pumpkin puree
* ½ cup agave (120ml)
* 1 t vanilla extract
* 1 t cinnamon
* 1 t pumpkin pie spice (or one each of: cinnamon, ginger nutmeg)
* sprinkle salt
Throw all ingredients in a medium sized pot and cook for 15 minutes, stirring the entire time. The mix will thicken up and become smooth and a bit viscous.
Here’s the recipe I made the first time which tasted amazing too.
Pumpkin butter is very sweet, so it’s great for topping off muffins and cakes, or a serving of pancakes. You can also spice up your fruit by smearing slices of pear or apple with some pumpkin butter.
