This is the first recipe in the ‘vegetables’ series. I try to incorporate more and more veggies very gradually, instead of solely eating them at dinner time. Having veggies as a (small) part of lunch is by now the norm for me (since most of my days I eat dinner leftovers for lunch), but serving them up as snacks is a new one (for me!). It is a great way to sneak in an extra serving, use up leftover or near their due-date vegetables, and the answer to healthy snacking. May I present to you: Buttered Broccoli & Raisins!
If you don’t have a microwave, you can steam the broccoli in a steam basket too!
This is a filling and healthy snack with a wide array of nutrients and other cool stuff: broccoli is high in calcium, folate and fiber, and vitamins C, A and k. It is said to be one of the healthiest vegetables out there and, in my opinion, tastes great too. The butter adds some fats and vitamins too (I always use half-fat) and the raisins provide quick energy.
